These are replicas of Dining Station Supply cars operated for Fred Harvey Restaurants.
They carried food, supplies and clean linens from the central kitchens and shops in Kansas City to outlying stations, and returned with the soiled linens.

AT&SF 2291 has a conventional peaked roof, but AT&SF 2299 has a clerestory roof with ice loading platforms that requires extensive kitbashing.
